Question 1 · NEET 2026

What is the reason behind production of large holes in 'Swiss Cheese'?
  1. A.The production of large amount of CO2CO_2 by Propionibacterium sharmanii
  2. B.The production of large amount of CO2CO_2 by Clostridium butylicum
  3. C.The production of large amount of CO2CO_2 and H2H_2 by lactic acid bacteria called Lactobacillus
  4. D.The production of large amount of CO2CO_2 and H2H_2 by Trichoderma polysporum
Answer and explanation

Answer: A

The large holes (eyes) characteristic of Swiss cheese are produced by large amounts of CO2CO_2 released by the bacterium Propionibacterium sharmanii during ripening. Clostridium is associated with butyric acid production, Lactobacillus with curd formation, and Trichoderma is a fungus (source of cyclosporin A). Hence the correct reason is CO2 from Propionibacterium sharmanii.
